1-1/2 cups finely ground Essential Everyday™ Honey Graham Crackers
1/3 cup granulated sugar
6 tablespoons butter, melted
3 large egg yolks
2 (14 ounce) cans sweetened condensed milk
1 cup key lime juice
In medium mixing bowl, combine finely ground crackers, sugar and melted butter; mix until well combined. Press into a 9-inch pie plate. Bake in a preheated 350°F oven 8-10 minutes.
Meanwhile, place egg yolks in a large mixing bowl. Using an electric mixer, beat on high until light and fluffy. Reduce speed to medium and gradually add condensed milk; beat until thickened (about 2 minutes).
Reduce speed to low; slowly add in lime juice until just combined. Pour into prepared graham cracker crust. Return to oven and bake 15-20 minutes or until filling is set. Cool completely. Refrigerate until ready to serve. Serve with whipped cream, if desired.
